Our house made Vadouvan is a jazzed up version of curry powder. The earthiness of the curry leaves along with the acidity if the kaffir limes and the subtle heat of the chilis combine perfectly for a punch of flavor. Use it on meat like lamb or chicken, or in stews, soups, and of course, curries. Temper it in a bit of hot oil to bring out the flavors and aromas, and prepare yourself for a beautiful meal.
