Pasilla Oaxaca has a strong smoky character, a scant hint of fruit, and a heat level that is pure and sharp but not overwhelming. It possesses a bit less heat than the chipotle but twice the smokiness. It is a medium heat chile and comes in at 4,000 to 10,000 SHU (Scoville Heat Units). Rich in color and flavor, it is used for many things such as table sauces, soups, stews, rubs, and marinades.
