Hearts of Palm
Hearts of palm are the inner core and growing bud of certain palm trees. This white, thick baton-like delicacy has a crunch on the exterior, and are creamy and soft in the center. They are cholesterol free, low fat, and have an excellent source of potassium, copper, iron, phosphorus, zinc and vitamins B2, B6 and C. Taste wise---sweet and nutty, and is close to the taste of an artichoke heart. Hearts of palm are eaten both fresh or in a can; the fresh ones tend to be more crunchy. They are hearty in their versatility as well. Add them to your salads, ceviche, dip, or rice dishes!
