Here at SOS Chefs we believe in using the whole product, and minimizing our waste whenever possible. The birth of this Zero Waste Paste came from a batch of kumquat skins left over from the juicing process, then we blended the skins with serrano peppers, olive oil and salt, to create a superfood paste packed with heat, salt, spice, and acidity. Use on a piece of chicken or fish, or simply with eggs spread on a steaming piece of sourdough bread. Feeling sick? Dilute a teaspoon in water and sip a cure all tonic of your dreams.
