You could always identify Italian cooking simply by the type of cooking fat was used, butter was used in the North, pork fat in the center of the country, and olive oil in the South. Here at SOS Chefs we have many Italian ingredients for you to satisfy in your Italian Interests!  For example we have Colatura di Alici di Cetara an Anchovy sauce that is renowned all over the world. It is used not only to prepare the famous spaghetti dish but also as a garnish instead of salt, for seasoning the various dishes we prepare. it can be seasoned with fresh herbs such as parsley, garlic, paprika and added to pure olive oil as a dressing.
